SUMMARY
The allocation of foods most consumed by a country population is based on different criteria: by cultural decision, where the crop is outstanding among consumers and therefore, it is highly consumed, thanks to traditional roots; Its popularity is passed down from generation to generation. Another criterion is the site where it is grown, the climatic conditions, the soil, the growing conditions, favor the development of the crop, becoming an important
food source. There are crops that do not fit into any category, without taking relevance among producers and consumers; This fact does not mean that they are not useful foods, it is simply that for particular reasons they re less preferred than the most consumed. Some of these litle cultivated species have characteristics and properties beneficial for the ecosystem, and in other words, for the well-being of human beings, high nutraceutical content, such as amaranth, taro or chaya. The objective of this review is to mention and highlight some crops considered as little widespread crops because they are not considered within the basic grains such as rice, corn and beans in Mexico, as well as the main characteristics at an agronomic level and general use in different regions. and in the world.
