ESTUDIO DE LA COMPOSICIÓN PROXIMAL DE VARIEDADES DE GARBANZO (CicerarietinumL.) COSTA 2004 Y BLANORO

RESUMEN

El garbanzo (Cicerarietinum L.) es una leguminosa que se caracteriza por ser un cultivo de bajo consumo de agua, que lo colocacomo cultivo alternativo para regiones agrícolas donde el manto freático ha disminuido. El cultivo es relevante por las cantidades importantes de proteínas y carbohidratos que, al combinarse con los cereales, proporciona un aporte nutricional de calidad para el humano. Las variedades de garbanzo se seleccionan con base a características agronómicas como tamaño de grano, rendimiento, respuesta al ambiente, resistencia a plagas y enfermedades, y se deja en segundo plano el contenido nutrimental, que se realiza ya obtenida la variedad.Con base a ello se propuso estudiar la composición proximal de la harina de variedades de garbanzo, Costa 2004 y

Blanoro, así como la forma de los granos de almidón, para determinar diferencias en el aporte nutrimental y morfología del almidón de ambas variedades. Los resultados mostraron diferencias estadísticas significativas en el rendimiento de proteína soluble, aminoácidos totales y contenido de cenizas en la variedad Costa 2004. En Blanoro, la cantidad de azúcares solubles totales y almidón fue mayor que en Costa 2004, mientras que la morfología de granos de almidón fue similar al mostrar superficie lisa, forma oval y esférica y no hubo diferencias significativas en el tamaño de los mismos.

ABSTRACT

The chickpea (Cicer arietinum L.) is a legume that is characterized by a culture of low water, placing it within the category of alternative crops for agricultural regions, where water tables have declined as a result of climate change. Its relevance is based on the amounts of protein and carbohydrate, when combined with cereals, provides nutritional quality for human consumption. The chickpea varieties generated in Mexico, in research centers like INIFAP, are selected based on agronomic traits such as grain size, performance, response to the environment, resistance to pests and diseases, leaving in the background the nutritional content which is already fulfilled when varieties meet the above characteristics. It is therefore, proposed that studied the proximate

composition of the flour of chickpea varieties Blanoro and Costa 2004, as well as the shape of the starch grains, to determine differences in nutrient intake and morphology of starch from both varieties. Statistically significant differences in the yield of soluble protein, total amino acids were observed and ash content, in the variety Costa 2004 regarding Blanoro. In Blanoro, the amount of total soluble sugars and starch was higher than in Costa 2004, while the morphology of the starch granules was similar for smooth, spherical and oval and no significant difference in the size thereof.
